Berlin

Three Berlin bakeries appear on the list. Bäckerei Siebert in Prenzlauer Berg has operated since 1906 as a family-run bakery with a small café, and its sourdough breads, East German rolls and filled cakes are made by hand. A long queue forms there at lunchtime. Johann Bäckerei in Schöneberg is a sourdough bakery whose rye and whole-grain breads draw queues outside on weekends. Bäckerei Hacker is also family-run, and its owner often serves at the counter; the cake slices and rolls are made in the old East German style.

Julius Brantner Brothandwerk is a small bakery selling sourdough loaves, rolls, pretzels and pastries, with the bakers visible from the street. Its long-fermented breads and rotating seasonal pastries are offered, though prices run high. Brotraum bakes its bread and pastries on site from organic flour. Its oven-baked doughnuts, croissants and pain au chocolat bring customers back, and the bakers work behind a glass wall.

Düsseldorf and Oberstdorf

Bäckerei Hinkel is a family-run bakery in Düsseldorf's Altstadt with a history of more than a century. It sells dozens of breads and pastries, including seasonal loaves made with Altbier, kale and Pinkel. Holzofenbäckerei Schroth in Oberstdorf is a wood-fired bakery that also serves breakfast and coffee. Its mountain farmer's bread and beechwood bread are said to stay fresh for days.
